After EXTENSIVE turkey research, here are my findings
The president will give a 5 to 7 minute speech, then approach the turkey for 30 to 60 seconds (pardon, pet, photos, shake hands, etc.)
Historical gobbles (Split between speech, pardon, post):
2007 Bush: No gobbles
2008 Bush: No gobbles
2009 Obama: 1 speech
2010 Obama: No gobbles
2011 Obama: No gobbles
2012 Obama: 4 speech, 4 pardon
2013 Obama: 2 speech
2014 Obama: No gobbles
2015 Obama: 7 speech, 4 pardon
2016 Obama: 2 Pardon
2017 Trump: 1 speech, 1 pardon
2018 Trump: 1 speech
2019 Trump: No gobbles
2020 Trump: 2 pardon
2021 Biden: 5 speech, 1 pardon
2022 Biden: 2 speech, 2 pardon, 1 post-pardon
2023 Biden: 1 post-pardon

Years yes: 12 (3 Trump)
Years no: 6 (1 Trump)
Notes:
> Only 1 turkey is present, not 2 (except Biden 2022)
> Roaming turkeys are more likely to gobble
> Audience clapping and laughing induces gobbles (Will Trump list achievements or make jokes?)
> Distance from podium to turkey table matters (Based on venue location). Closer = more likely to hear a gobble
Presidential differences:
> Obama made a lot of jokes and seemed like he really enjoyed the event + would pet the turkeys
> Trump is very focused on his speech. Especially in 2020, he mentioned jobs, the market, etc. He was far from the turkey during his speech. Will he do this again with the state of things?
> Biden had a lot of banter with the turkeys, audience, and would often stay past the pardon for an additional speech, where 3/4 had at least 1 gobble
Today's meet-the-turkey event:
> One of the two turkeys is literally named Gobble
> Both turkeys equally vocal
> Both turkeys were roaming despite the people
